Almond Flour Chocolate Chip Cookies

These gluten-free, dairy-free and refined sugar-free chocolate chip cookies are packed with nutrients and so yummy! They are perfect for a little high protein snack as you get back into routine this September!

Ingredients: 

2 c. blanched almond flour

½ tsp baking soda

¼ tsp. salt

¼ c. coconut oil, softened

3 tbsp. maple syrup

1 tsp. vanilla extract

½ c. bittersweet chocolate chips

Makes: 18 cookies

Instructions:

Preheat the oven to 350 F. .

In a mixing bowl mix together almond flour, baking soda, and salt. 

Add in coconut oil, maple syrup and vanilla. Mix well. Stir in chocolate chips.

Drop the batter in rounded tablespoons onto a parchment lined baking sheet. Gently press to flatten. These cookies will not spread.

Bake for 8-9 min. Allow them to cool on the baking sheet for 10 minutes and then transfer to a wire rack. Enjoy!
