Pumpkin Pie Granola

Homemade granola is so easy to make and is a much healthier choice compared to store bought granola which is usually loaded with oil and sugar. This is full of all the fall favourite goodies! The notes of cinnamon, toasted nuts, cozy pumpkin flavour and sweet and salty notes make this irresistible. 

The benefits of cinnamon and turmeric for auto-immunity are bountiful. They possess strong anti-inflammatory properties. Pepper may help your body absorb all of turmeric’s benefits.

This recipe is flexible! Dig deep in your pantry and use what you have. Choose a variety of nuts and seeds and your choice of dried fruit. You can’t go wrong!

Feel free to double or even triple this recipe. I love to do this and pop a few freezer bags full into the deepfreeze to save time and effort down the road.

 

Ingredients: 

3 c. rolled oats

2 c. total of any combination of the following: Flax seeds, pumpkin seeds, sunflower seeds, chia seeds, walnuts, pecans, and diced almonds

1 tsp. pumpkin pie spice

½ tsp. turmeric

½ tsp. cinnamon

⅛ tsp ground pepper

½ tsp. salt

¼ c. coconut oil, melted

⅓ c. maple syrup

⅓ c. pumpkin puree

1 c. diced dried apples, raisins or cranberries

Instructions:

Preheat the oven to 340.

In a large bowl, combine oats, nuts and seeds, spices and salt. 

In a separate bowl combine coconut oil, maple syrup, and pumpkin puree.

Add the wet ingredients to the dry and mix thoroughly. 

Spread on a parchment lined baking sheet. Bake for 30 minutes, stirring halfway through.

Allow it to cool completely and store in an airtight container. Enjoy with milk of your choice, with yogurt or on top of your favorite smoothie bowl!
