Cranberry, Pear & Apple Crisp
The holiday season can be exhausting. If you’re feeling drained, this simple, healthy dessert is the perfect solution for those times you have to feed others. It’s quick to prepare, customizable to your dietary needs, and offers a sweet, nourishing treat without the stress.
Feel free to use what flour suits your diet. You can divide this up between 2 8”x8” pans and cook one now and freeze one for later! Or you can create a nourishing breakfast by serving it with a dollop of greek yogurt!
Ingredients
Recipe:
8 Bosc Pears, cored and sliced
3 Apples, cored and sliced
1 ½ c. Frozen Cranberries
⅓ c. Maple Syrup
2 tsp. Cinnamon
Juice of ½ a lemon
Topping:
2 c. Rolled Oats
¾ c. Butter (or Coconut oil)
1 c. Oat Flour (Feel free to use all purpose, gluten free, or almond flour)
⅓ c. Monk Fruit
⅓ c. Brown sugar
2 tsp. Cinnamon
Instructions
Preheat your oven to 350 degrees celsius.
In a 9×13 pan toss together fruit, maple syrup, cinnamon and lemon juice.
In a medium mixing bowl, mix oats, flour, sugar and cinnamon. With a pastry cutter, two knives or hands mix in butter until a crumb has formed.
Layer the crumb over the fruit mixture and bake for 50 minutes or until bubbly.
