Golden Tofu with Sweet Potatoes

This nourishing Golden Tofu and Sweet Potatoes dish is Packed with anti-inflammatory ingredients, healthy fats, and protein and it takes no time to make. 

It’s the perfect meal to fuel your body and keep you feeling cozy.

Ingredients

350g Extra Firm Tofu, cut into ½ inch cubes

3 tbsp. Extra Virgin Olive Oil or Coconut Oil

1 large shallot, diced finely

1 tbsp. Fresh Ginger, minced

1 tbsp. Ground Turmeric

1 tsp. Salt

Pinch of red chilli flakes

½ c. Fresh Cilantro, chopped and packed

1 Large sweet potato, peeled and cubed (4-5 cups)

2 c. Canned coconut milk

1 ½ c. Vegetable broth

2 tbsp. Rice vinegar

Juice of 2 limes

2 c. Kale, chopped 

Salt to taste

Instructions

In a large pot, over medium heat, add oil and shallots. Cook until translucent, stirring frequently.  Add fresh ginger and stir.

Add cubed tofu, turmeric, salt, chili flakes and fresh cilantro. Stir to combine.

Add sweet potato, coconut milk, vegetable broth and rice vinegar and stir to combine. Cover with lid and bring to a boil. Reduce heat to low medium and simmer until sweet potatoes are tender.

Remove the lid and continue to cook until sweet potatoes begin to easily mashed. 

Add chopped Kale and stir to wilt the kale. Add lime juice and salt to taste. 

Serve over rice or with Naan. 

Feel free to double this recipe and freeze for a later time!
