Lettuce Wraps
These lettuce wraps are the perfect blend of nourishment and flavor! Made with wholesome, healing ingredients, they’re easy to digest and completely free from common inflammatory triggers—perfect for anyone following an Autoimmune Protocol (AIP), paleo, or anti-inflammatory diet.
I always double the recipe and put half in the freezer for those nights where I just don’t feel like cooking!
Ingredients
Sauce:
⅓ c. soy sauce/ coconut aminos
2 tsp. Sesame oil
3 tsp. Rice vinegar
2 tbsp. Almond/ peanut butter
3 tsp. Fresh ginger
1 tbsp olive oil
1 small onion, diced
1 c. mushrooms, diced finely
1 lb lean ground beef or chicken or turkey
1 c. shredded carrots
Salt and pepper to taste
3 green onions, sliced thin
1 head butter lettuce
Instructions
In a small bowl combine soy sauce, sesame oil, rice vinegar, almond butter and ginger. Set aside.
In a large frying pan, heat olive oil, add onion and cook until translucent.
Add ground meat and cook until it begins to brown. Add carrots and cook for 3 min.
Add prepared sauce and stir for 2 minutes.
Serve in butter lettuce leaves and enjoy!
