Nightshade free Lemongrass Curry

If you’re following an Autoimmune Protocol (AIP) diet or simply looking for a nourishing, anti-inflammatory meal, this nightshade-free Thai-inspired prawn curry is a perfect choice. It’s packed with flavor, rich in nutrients, and completely free from common triggers.

Ingredients

1 tbsp. coconut oil or other neutral oil

3 tbsp. ginger, minced

2 shallots, diced finely

2 tsp. Turmeric powder

½  tsp. Cinnamon

1 tsp. Salt

5 c. yams, diced

4 c. Coconut milk

4 tbsp. coconut aminos or soy sauce

2 lemongrass stocks, chopped, peeled and grated

4 c. broccoli, chopped

2 c. Green beans

400g prawns, raw and peeled

Juice of 1 lime

1 c. thai basil, chopped

Instructions

Cut the top two inches of the lemongrass stalk off. Remove the tough outer layer. Cut off the bottom bulb. Cut the bottom third of the stalk and grate on microplane, zester or grater. Cut the remaining stalk into 3-4 inch pieces. Set aside. 

Add coconut oil to a large skillet over medium heat, add ginger and shallot and cook until fragrant. 

Add yams, stir and cook for 3 minutes. Add turmeric, cinnamon, and salt. 

Add coconut milk, coconut aminos, grated lemon grass and lemon grass stalks and cook until yams begin to soften. 

Add broccoli, green beans and prawns and cook until broccoli is tender and prawns are pink. 

Stir in lime and chopped basil. 

Enjoy this curry over cauliflower rice for a fully AIP-compliant meal or serve it with traditional rice if your diet allows.
